4 cups cold boiled rice
2 eggs
½ cup diced cooked ham
¼ cup scallions cut in ¼ inch pieces
2 tablespoons soy sauce
½ teaspoon sugar
4 tablespoon corn oil

Directions:
Directions:
Beat eggs and scramble them slightly in 1 tablespoon of oil. Do not over cook.
In a wok or heavy frying pan (non stick works too) heat the remaining oil over a high heat.
Add rice and stir so it doesn’t stick.
Add the soy sauce, and sugar and mix.
Add the egg and ham and serve once it is hot.
Can add a few cooked peas or carrots.

Traditional Chinese cooks use long grained white rice but brown rice works too. Can omit or reduce the amount of scallions and add a little finely chopped sweet bell pepper. Sliced deli ham that has been chopped works in a pinch. Omit the ham for vegetarian rice. Recipe can be halved.
