1 cup quick rolled oats
1 ½ cup boiling water
½ cup butter
1 cup brown sugar
1 cup white sugar
2 eggs beaten
1 ½ cups all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt


Directions:
Directions:
Pour boiling water over the oats, stir, and let cool.
In a large bowl cream together butter, brown sugar, and white sugar. In a separate bowl, beat eggs till fluffy and add to creamed mixture.
Sift dry ingredients into a separate bowl.
Add wet oatmeal and dry ingredients alternatively to the creamed mixture stirring gently.
Bake in a greased 9 X 11 inch pan at 350 º F for 35 minutes.
 

Topping

6 tbsp. melted butter
½ cup brown sugar
½ cup coarsely chopped nuts
¼ cup cream
½ cup sweetened desiccated coconut
½ tsp. vanilla

Mix topping ingredients together. When the cooked cake is still hot carefully spread topping over cake. Broil 4 inches from the top burner of the oven till just bubbling. Watch closely that it does not burn.

Can add raisins that have been plumped in warm water and well drained to the cake batter. Good with ice cream or whipped cream
