1 tbsp. Parsley, minced
1 lb. Crabmeat, cooked or canned (flaked)
2 thin Bread Slices, crust removed; diced
½ cup Mayonnaise
1 large Egg, separated
¼ tsp. Salt
1/8 tsp. Paprika
1/8 tsp. Nutmeg
½ tsp. Worcestershire Sauce

Directions:
Directions:
In a medium mixing bowl, mix bread and mayonnaise; let stand for 5 minutes. Add unbeaten egg yolk, salt, paprika, nutmeg, and crabmeat. Mix with a fork lightly. Beat egg white until stiff; fold into crabmeat mixture. Shape into 12 cakes (1/4 cup each).

Brush a large skillet with butter, add crab cakes and cook over medium heat, turning once. Cook until brown; about 10 minutes.
