4 chicken breasts - flattened

Tomato Basil stuffed breasts
1 medium tomato - diced
1/2 medium onion - diced thinly
1/4 cup fresh basil
1 cup of grated mozzarella cheese
salt and pepper to taste

OR

Cranberry- Apple stuffed breasts
2 green onions, finely chopped
1/2 cup fresh or dried cranberries, coarsely chopped
1 medium apple, finely chopped
1/2 block of cream cheese (4oz)
1 cup baby spinnach, finely chopped
1 cup shredded mozzarella cheese

or

Ham & Cheese stuffed breasts
1/2 cups grated Swiss, Monterey Jack or mozzarella cheese
2 Tbsp chopped ham
2 tsp Dijon mustard
Freshly ground pepper to taste
1 egg white

CRUST
1 cup plain dry breadcrumbs
1 egg

PREHEAT oven to 350ºF

PREPARE baking sheet (size depends on how many breasts your cooking) with parchment paper

MIX 1/2 cup of mozzarella cheese and remaining ingredients together then place on flattened chicken breast.

ROLL the mixture inside (insert a toothpick to hold the seems together)

DIP in egg then breadcrumbs, place on baking dish - seam side down

BAKE for about 40 minutes or until chicken reaches 165°
