1 pound of fresh ramen noodles, or dried Asian noodles. Spaghetti works in a pinch.
Leftover roast pork to taste from roasted pork shoulder, shredded
8 cups of chicken broth (a bouillon or chicken base can work here)
¼ pound of ginger cut into half inch rings and lightly smashed with a meat mallet
1 bunch of scallions chopped into 1 inch pieces, stems removed
1 cup of dried shitake mushrooms (Asian markets have this for much less)
Ginger scallion sauce for garnish
Soy sauce to taste

Directions:

Add about 1 tablespoon of canola oil to a stock pot and turn on heat to medium.
Add ginger and scallions and sauté a few minutes until just starting to color.
Add broth and dried mushrooms and bring to a boil. Reduce heat and simmer for about 30 minutes. Remove ginger pieces with tongs. Add roast pork and continue to simmer.
Cook Ramen in lightly salted water and drain in colander.
Take out some Ramen and place in bowl. Remove some soup ingredients with slotted spoon and put over noodles. Ladle broth to taste over that. Garnish with a teaspoon or so of ginger scallion sauce. Serve.
