3 pkgs. Knox gelatin
1 cup ice water, divided
1 1/2 cups granulated sugar
1 cup corn syrup (Karo)
1/4 teaspoon salt
1 teaspoon vanilla (or peppermint)
1/4 cup powdered sugar
1/4 cup corn starch
non-stick spray

Directions:
Put gelatin in mixer bowl. Add 1/2 cup ice water. Stir then let set. In saucepan, combine remaining ice water, granulated sugar, corn syrup & salt. Cook on high covered for 3-4 minutes. Uncover & clip candy thermometer & cook to 240º (about 7-8 min.) Remove from heat. Using whip, start mixer on low. Slowly pour syrup down the inside of bowl. When done, ship on high until thick & fluffy & lukewarm (about 12-15 min). Meanwhile, spray a 9x12 pan. Sift powdered sugar & corn starch together to cover entire pan. Shut off mixer. Add flavoring then whip 1 minute. Pour marshmallow & smooth 2/ buttered spatula. Dust with sugar/corn starch mixture. Cut & dip sides in remaining powder mixture. Store air-tight.
