Ingredients: 1 package dried great northern bean 1 Pork Roast 2 onions, sliced 1/4 c. Worcestershire sauce Salt and Pepper

Directions: |
Directions:1. The night before cooking, soak beans in warm water to soften. 2. The next day, drain and rinse beans. 3. Place the raw beans in a covered roasting pan. 4. Add onions and Worcestershire sauce and stir. 5. Put in some water so beans do not burn. 6. In electric skillet salt and pepper the roast and brown on all sides. 7. Place roast on top of beans. 8. Bake at 350º for 2 - 3 hours until roast is done and beans are tender.
Note: If roast is done before beans, take roast out and seal in aluminum foil and continue cooking beans. Serve with boiled potatoes and applesauce. |

Notes: This is called Pork Roast with Navy Beans but Mom said the Great Northern Beans are much better than the Navy Beans so I use the Great Northern Beans.
This was one of Dad's favorites. He always mixed the meat and beans with ketchup which looked nasty but he said it was good.
Mom always served this meal on New Year's Day because she said it was a lucky meal. She always said that Nana told her that you had to have pork on New Year's Day for luck and could never have chicken because pigs root forward and chickens scratch back. So I always make pork roast and navy beans as we call it on New Year's Day.
