In a medium bowl add 2 tablespoons of sugar, 2 tablespoons of fish sauce, 1 tablespoon of minced garlic, 1 tablespoon (or to taste) of chopped red Thai chili’s (or chili’s of choice), 1-2 limes juiced (some pulp as well), 10 tablespoons of water, and a little chopped cilantro. Stir well with a whisk to combine and serve with fried egg rolls, spring rolls, etc.
