2/3 C Cornstarch
1 C Buttermilk
2 T Dijon Mustard
6 Garlic Cloves (minced)
3 C Corn Flakes (crushed) or Panko Bread Crumbs
Salt & Pepper
8 Pork Chops - boneless, 1/2" to 3/4" thick, trimmed
2/3 C Vegetable Oil
4 Lemons - cut into wedges

1. Spread 1/3 C cornstarch in a shallow dish. In another shallow dish, whisk the buttermilk, mustard and garlic. Place cornflakes or breadcrumbs seasoned with salt and pepper, and remaining 1/3 C cornstarch in a third shallow dish and whisk to blend.
2. Adjust oven rack to middle and heat oven to 200º. Set wire rack in parchment paper lined baking sheet.
3. Cut 1/16 inch cross-hatches in each pork chop - both sides.
4. Working with one chop at a time, season each of salt and pepper, then dredge each in cornstarch, then buttermilk and then corn flakes - pressing the flakes into each chop on both sides. Place chops on wire rack and let stand for 10 minutes.
5. Heat 1/3 C oil in large non stick skillet, over medium high heat until shimmering. Place 4 chops in the heated oil over medium high heat and cook until golden brown and crispy 2 to 5 minutes. Carefully flip pork chops and cook on second side until golden brown and crispy - another 2 to 5 minutes.145

6. Transfer chops to paper towel lined plate and let drain - 30 seconds each side. Transfer chops to wire rack on rimmed baking sheet and place in oven to keep warm.
7. Discard oil in skillet and wipe clean with paper towels. Repeat cooking of 4 remaining pork chops.
8. Serve with lemon wedges
