1 ham (12-16 pound), bone-in
cider vinegar or apple juice
cloves
mustard
brown sugar

In a roaster or large baking pan, put 2-3 cups of water, covering ¾" to 1" in the bottom of the pan. Put ham in, fat side up. Add ½ to ¾ cup cider vinegar or apple juice (or other fruit juice), and pour some of this over the ham as you pour it in. Dump 1 cup of brown sugar over the top of the ham. Cook ham covered at 250º in the oven for about 15 minutes per pound, or as directed on ham. Test for being done by pulling out spoon bone.
Skin ham with sharp knife, cutting off all but about ¼" of fat. Score fat in # shapes. Stick cloves in scored shapes of fatty side. Then spread thin layer of mustard over it, and pat brown sugar over the mustard and cloves. Put ham under the broiler for about 10 minutes, or until ham is glazed over. To carve, start in center.
