2 large heads of blanched escarole (Wash escarole thoroughly and boil for 5 minutes in salty water and then shock in an ice bath. Drain and squeeze of excess water.)
¼ cup ham or pancetta, sliced thinly
1 large onion chopped into ½-1 inch pieces
2 or 3 cherry peppers seeded and quartered with some juice reserved
1-2 cups seasoned bread crumbs (Homemade or store bought)
½ cup of chicken broth
3 tablespoons of olive oil
Grated Pecorino Romano cheese to taste
Salt and pepper to taste

Directions:
Directions:
Sauté ham/pancetta and onion in olive oil in a large wide skillet until pancetta is turning golden and beginning to crisp.
Add cherry peppers and juice and cook another minute.
Add escarole and mix up with a pair of tongs. Add chicken broth and cook while stirring until broth is gone.
Turn off heat and add bread crumbs to taste. Taste for seasoning. Mix and add some pecorino Romano cheese to taste. Put under broiler for a minute or two if you want.
