6 C Croutons
1/2 C Extra Virgin Olive Oil
3T Red Wine Vinegar
4 Ripe Plum Tomatoes, cored, seeded and cut to medium dice
1/2 Red Onion, sliced very thin
6 T Fresh Basil leaves - sliced
4T Fresh Oregano - sliced
1T Parsley - minced
Salt & Pepper to taste

1. Place croutons in a serving bowl
2. Mix oil, vinegar, tomatoes, onion, and half of the herbs in a medium bowl. Let mixture stand for at least 10 minutes to allow flavors to develop.
3. When ready to serve add the oil and tomato mixture to the croutons in the serving bowl, along with the remaining herbs and toss well.
4. Season with salt and pepper to taste and serve.

NOTE: You can make your own croutons or purchase a good quality croutons - or your favorites.
NOTE: You can add roasted red peppers. To make the roasted red peppers: Slice open and core 2 red peppers. Spread on a rimmed baking sheet - skin side up. Place on broiler and roast until skin is charred and puffed but flesh is still firm. Cool, peel charred skin and add to marinating mixture of oil and tomatoes and marinate.
