3 heads of escarole that have been thoroughly washed in cold water and the end stems chopped off.
Add cleaned escarole to a large pot of boiling salty water.
Bring to a boil and boil for about 2-4 minutes. Remove the escarole to an ice bath and rinse in the water.
Squeeze all the water out of the escarole.
Sauté with garlic and oil, add to soups, or use for Utica Greens.
