6 EGGS, ROOM TEMP.
1/2 C. COLD WATER
2 C. SUGAR
1 t. vanilla
1 1/2 c. cake flour sifted
1/2 t. salt
1 t. baking powder
1/2 t. cream of tartar

Directions:
Preheat oven 325-Seperate eggs in lge. mixing bowls. Beat yolks until light and foamy, slowly add water.
Gradually beat in sugar and vanilla; beating until pale and thick(can be as long as 7 min.) Sift flour with salt and baking powder and fold into egg yolk mixture a little at a time.

Beat egg whites until foamy; add pinch of salt and cream of tartar and beat until they form moist, glossy peaks.

Gently cut in egg yolk mixture to egg whites, folding with a rubber spatula. Pour into ungreased 10" tube
pan with removable bottom. Draw a thin spatula thru
the batter to get rid of air pockets.

Bake on second rack from bottom for 1 hr. Invert on
rack and let cool out of pan for 1 1/2 hr.

Frost when completely cooled with Orange Butter Cream Frosting-----------
2 sticks butter
2 1/2 c. powdered sugar
Orange juice to thin to spreading consistency.
