4 c. Bran Flakes cereal
2 c. All-Bran cereal
2 c. boiling water
1 qt. (4 c.) buttermilk
8 T. (1/2 c.) butter, melted
1/2 c. (no sugar added) applesauce
2 c. sugar
4 large eggs
1 t. vanilla extract5 c. whole wheat flour
4 t. baking sugar
1 t. salt

Put the bran flakes and all-bran in a large bowl with a tight fitting lid. Pour the boiling water over the cereals and mix well. Stir every couple of minutes while the mixture cools to room temperature. The mixture will become very thick and sticky.

After the mixture cools, add the eggs, melted butter, applesauce, vanilla and buttermilk. Mix well. Add the flour, baking soda and salt. Mix well to combine all ingredients together.

This batter can be covered well and kept in the refrigerator for up to 30 days. To bake, scoop the batter into greased or lined muffin tins. Fill 3/4 full. Bake at 375º for about 14 - 16 minutes, until a toothpick inserted in the center of a muffin comes out clean or with a few moist crumbs.

Delicious and easy to make. Mix all in the bowl you are storing the batter in. Easy to mix by hand - no need for a mixer.
