Easy "Wow" Salad Recipe

Ingredients: Arugula (about 1 1/2 c. per person) Prosciutto (about 1/2 to 1 thin slice per person) Shaved Parmigianino-Reggiano cheese (about 2 T. per person) Litehouse Pear Gorgonzola Vinaigrette Dressing (if unavailable, make your own - recipe in this book) Spiced Candied Pecans (about 2 T. per person)

Directions:Slice Prosciutto into thin strips and separate as much as possible so they aren't clumped together. Gently toss Arugula, Prosciutto, half of the pecans and half of the with salad dressing to taste. Be careful not to over dress. Too much dressing will bog down the salad. You can always add more dressing, but you can't take away. Plate the salads and top each with remaining pecans and cheese.
Spiced Candied Pecans: Break halves into smaller pieces (but not too small). Set out a parchment paper sheet on counter or plate. Melt butter in small skillet. Add pecans and sugar and a quick dash of cayenne pepper. Cook over medium heat stirring constantly until pecans are caramelized with sugar and golden in color. Be careful not to burn. Once the carmelization begins, they can burn quickly. Spread onto parchment paper to cool. Break into pieces as necessary. Note: For about 1 c. of pecans use about 1 T. butter, about 2 - 3 T. sugar. Adjust proportions with amount of pecans you want to make. |
