8 Qt Cucumbers cut small or wedges
2 Cups Pickling Salt
4 Qt Boiling Water
2 Tbsp Alum
2 Gal Hot Water
3 Qt White Vinegar
14 Cups White Sugar
¼ Cups Celery Seed
½ Cups Mixed Pickling Spice

Directions:
Directions:
Remove seeds from cukes, do not peel. Make a brine of salt and water. Let stand 3 days then drain brine from cukes. Heat brine to boiling and pour over cukes again, let stand 3 days.
Drain again , discard brine and rinse with cold water. Dissolve alum in boiling water and let stand on cukes for 6 hours. Drain and rinse. Make a syrup of vinegar, sugar and spices. Pour over cukes and let stand 1 day. Repeat draining and boiling syrup and pouring over cukes for the next 2 days.
On the last day place cucumbers in sterilised jars, bring syrup to the boil, add green food colouring, and pour over cukes and seal.
