3 cups of all purpose flour (Substitute 1 cup whole wheat flour for whole wheat version)
1 ½ cups of water
1 ½ teaspoons salt
¼ teaspoon yeast

Directions:
The night before you plan to bake bread, mix all the dry ingredients in a big bowl. Add water and mix very well with a big spoon. About 3 minutes.
Cover bowl and let rise overnight.
Remove dough from bowl with wet rubber spatula or wet hands place onto a very floured surface. Press dough out and fold the sides toward the middle and the top and bottom toward each other. Let rest 20 minutes.
Re-flour the dough and work area surface and turn dough over. Shape dough into a ball and place dough into a small skillet lined with parchment paper. Cover with linen or towel and let rise 2-4 hours.
1 hour before bake time, put a Dutch oven with lid on and put in an oven set to middle rack. Turn oven on to 450.
After dough has risen in skillet, slash the top of the bread in the shape of the letter x with a razor or sharp knife.
Remove the hot Dutch oven from oven and remove lid. Quickly transfer risen dough to hot Dutch oven by holding the sides of the parchment paper. Put lid on and place in oven for 30 minutes. Remove lid and bake another 20 minutes. Remove bread and let cool. Cut with serrated knife and serve with softened butter, extra virgin olive oil, or whatever you want.
