½ of All Purpose Pizza Dough recipe, fully risen (other piece frozen or reserved)
8 oz. of broccoli crowns that have been blanched for 2-3 minutes in boiling water and then sautéed in garlic, olive oil, salt and pepper.
¼ pound of Mozzarella cheese, grated
Pecorino Romano cheese to taste

Directions:
Directions:
Turn oven to 425 and set rack to middle position.
Chop up the broccoli into bite size pieces and toss in a mixing bowl with the grated mozzarella and pecorino to taste.
Place the pizza dough onto a lightly floured surface and press out into a rectangle the size of a manila envelope. Flour the dough as you go so it doesn’t stick. Lay the mixture all over the dough and roll the mixture up like tucking the ends underneath to seal. Cut the dough quickly using a sharp knife in 2 inch pieces. Carefully transfer the pieces onto a lightly greased pizza pan and pat down each pin wheel a little bit.
Bake for about 20 minutes or until golden brown. Serve.
