Black Pepper Taralli Recipe

3 ¾ cups of all purpose flour
2 teaspoons of salt
½ teaspoon of yeast
1 cup plus 3 tablespoons of water plus ¼ cup of dry white wine
1 tablespoon plus 1 teaspoon of freshly cracked black pepper

Directions:
Directions:
Mix all dry ingredients in the bowl of a standing mixer and then slowly add in the wet ingredients. Mix on medium for about 5-7 minutes.
Remove dough to a large clean surface and start evenly dividing the dough. In half, then each piece in half, etc. until you get 32 pieces. Roll each piece to about an even 10 inch piece rope. Connect the 2 ends and pinch to seal. Then pick the piece up and it should hang down to the right shape with is a long circle. Let each piece rest on a greased pizza pan(s) for 2 hours.
Bring a wide pot or skillet up to boil with water and add a few tablespoons of olive oil. Poach a few pieces of taralli at a time until they float, about a minute or so. Remove to a cooling rack. Repeat with remaining taralli.
Place the boiled taralli back onto the pizza sheets and place in a 400 degree oven for 40 minutes. Rotate the racks half way through the cooking time. Allow to cool on a rack and serve. Keep in containers or freezer bags.
