½ pound of very fresh, cleaned, stripped bass, diced
½ of a ripe mango, diced
1-2 tablespoons of red onion, diced
2 limes, juiced and zested
1-2 tablespoons cilantro, diced
1 jalapeño, seeded and diced
1 tablespoon olive oil
Kosher salt and cracked black pepper to taste

Directions:
Directions:
Add lime juice and zest into a large bowl. Add red onion and let stand about 5 minutes. Add all the other ingredients and toss well. Let ceviche sit for 30 minutes in the fridge. Taste and adjust seasoning. Serve on a bed of lettuce, with tortilla chips, or by itself.
