Fried Calamari Recipe

2 inches of canola oil
1 lb. sliced calamari rings about ½ inch pieces
1 cup cornstarch
¼ cup cornmeal
¼ all purpose flour
½ teaspoon table salt
½ teaspoon ground black pepper
1 egg white beaten in a large mixing bowl

Directions:
Directions:
Mix together all dry ingredients and put in a wide shallow bowl or casserole dish. Or, place flour mixture in a large paper bag.
Heat canola oil to 350-375 degrees in a Dutch oven or equivalent.
Add calamari to egg white bowl and mix.
Carefully dredge about 1/3 of calamari in flour mixture (in dish or shake in bag) coating them completely and place them on a wire rack with a baking sheet under.
Carefully lower them into the oil in different spots with wire net spoon and cook for 1-1 ½ minutes.
When done take them out with a wire net spoon and place them on paper towel lined plates. Season at this point if desired.
Allow oil to reach temperature again and repeat with remaining calamari.
