Ingredients:  
1 can of black beans, drained
1 ½ cups of corn
4 scallions all the white and half the green parts used
Jalapeño seeded and diced
¼ cup fresh cilantro chopped
1 vine ripened tomato seeded and chopped
1 red bell pepper seeded and diced or equal amount roasted peppers
Juice of 1 lime and zest
½ teaspoon cumin
Salt and Pepper to taste
2 tablespoons olive oil

Mix well in a big bowl and let sit in fridge for a little while. Serve with tortilla chips, as a side dish, or on top of grilled proteins.
