Lemon Poppy Seed Bundt Cake Recipe

Cake:
1 large lemon cake mix
1 box lemon instant pudding (or vanilla)
4 eggs
1/2 cup vegetable oil
1 cup boiling water (can include the juice of a lemon)
zest of 1 lemon
1/2 cup poppy seeds

Glaze:
1/2 cup white sugar
2 lemons (juice and zest)

Directions:
Directions:
Mix all ingredients for cake (except poppy seeds). Mix for 2 minutes with electric mixer. Add poppy seeds and mix some more.
Pour into greased Bundt pan and bake at 350 º F for 45 to 50 minutes.
Cool for about five minutes and then remove the cake from the Bundt pan and place on a cooling rack.
For Glaze:
Heat lemon juice, zest, and sugar to dissolve the sugar.
Pour slowly over warm cake.

Adding glaze can get messy so set the cooling rack on a sheet pan to make clean up easier.
Can omit the poppy seeds. If you do not have a Bundt pan an Angel Food tube pan will do.
