Graham Cracker Crust:
1 ½ to 2 cups of graham cracker crumbs
¼ cup melted butter

Cake:
16 ounces of cream cheese (low fat is fine) Must be at room temperature
¾ cup white sugar
½ cup sour cream
1 teaspoon vanilla extract or almond extract
4 eggs

Glaze:
1/3 cup white sugar
1 tablespoon cornstarch
1 ½ cups blueberries (or any fruit combination)
1 tablespoon lemon juice

Graham Cracker Crust:
Mix together crumbs and butter and pat into bottom of pan (Spring form is best but a 8 X 8 inch pan is fine). Bake at 325 º F for 15 minutes.

Cake:
In a large bowl (or food processor) beat cream cheese until fluffy. Gradually add sugar and beat until smooth. Add sour cream, eggs, and vanilla. Warning: do not add the eggs and sour cream until the cream cheese is well beaten and smooth or you will get lumps that are hard to get rid of. Pour batter over crust and bake for 40 minutes or until only a 3 inch circle in the center jiggles.
If using a spring form pan wrap the bottom in foil in case it leaks.

To cook the cheese cake it is recommended that you sit the pan in a shallow dish with water in it (no more than half way up the spring form pan) and that you leave the cake in the oven (turned off) with the door closed for 1 hour after the baking time is finished. These approaches are supposed to help reduce the cracking on the top of the cake.
Glaze:
For the glaze heat everything in a small sauce pan until the liquid thickens. Cool and put on top of the cake.

Note from Brenda: I have used many cheese cake recipes but find this one reliable and easy to modify into many different cakes. I have been using is since 1981.
Modification to crust: Use chocolate or ginger cookie crumbs instead of graham cracker crumbs
Modifications to the cream cheese mixture: Can add lemon zest and juice instead of vanilla. Or add 1 cup melted chocolate to cream cheese mix.
Modification to the glaze: Can skip glaze and just sprinkle with fresh fruit or a fruit sauce.
