Egg pancake batter (see previous recipe)
Soft cooking/baking apples (e.g., MacIntosh, Cortland, Duchess, Wealthy, Wolf River)
-may add a little extra sugar depending on the sweetness of your apple.

Directions:
Directions:
Peel and core apples, leaving the apple round. Slice apple in rounds. Dip in egg pancake batter and place on heavily greased (shortening or lard -- cooking spray is not sufficient) griddle. Add a little extra batter on each apple slice. Fry until golden brown.

Serve with butter and sugar or as desired.
