1 cup red beans
1 cup black beans
1 cup garbanzo beans
1 cup white beans or black-eyed peas
2 tsp. Dijon mustard
1 tsp. finely chopped garlic
1/2 cup red wine vinegar
A pinch of sugar
1/2 cup olive oil
1/2 pound fresh or frozen cut into 1/2 inch pieces
1/2 cup scallions, cut diagonally into 1/4 inch slices
1/4 cup chopped Italian parsley
Finely grated peel of 1 lemon
Salt and freshly ground black pepper to taste

Directions:
Directions:
If using canned beans, rinse well, drain and pat dry before combining in a bowl. Place mustard, garlic, vinegar and sugar in a food processor for 30 seconds; add vinegar to mixture. Toss over beans. Cook green beans for 3-5 minutes in boiling water; drain and rinse with cold water and pat dry; add to other beans. Add remaining ingredients and toss together. Let set for at least 30 minutes.
