1 Grandma's Pie Crust, pre-baked (please see separate recipe)
7 Eggs, yolks and whites divided
1/2 tsp. Salt
1 c. + 1/2 c. Sugar
2 heaping tbsp. Corn Starch
5 1/2 c. Milk
2 tsp. Vanilla
1/4 c. + 1 tbsp. Coconut

Directions:
Directions:
Stir egg yolks. Add 1 cup of sugar, salt, and corn starch gradually to the egg yolkss. Add in milk and mix until smooth. Cook this mixture over medium heat, stirring constantly. Remove from heat when mixture begins to thicken. Add 1/4 cup coconut and vanilla to egg yolk and milk mixture and stir in gently. Let cool. Beat egg whites until they begin to form stiff peaks. Gradually add in 1/2 cup of sugar while continuing to stir. Pour cooled egg yolk and milk mixture into the pre-baked pie crust. Next add the egg white and sugar mixture. Sprinkle the top with 1 tablespoon of coconut. Bake at 350 degrees until topping begins to brown.
