2 c. sugar
3 eggs
2 c. oil
1 orange (squeeze juice, save peel for zest)
3 c. all purpose flour
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
2 tsp vanilla flavoring
1 tsp. nutmeg
3 large Granny Smith apples, peeled and cubed
1 c. chopped pecans
Glaze:
1 c. powdered sugar
1 tsp orange zest
1 tsp milk (more may be added, if needed)

Directions:

Grease and flour bundt pan. Preheat oven to 325º.
Mix sugar, eggs, oil, and orange juice. Slowly add dry ingredients. Add apples and pecans last. Batter will be very thick.
Bake 1 hour and 15 minutes. Turn out of pan and cool. Mix glaze to the consistency you like and drizzle over cake.
