1/2 pound butter
2 cups sugar
3 eggs, well beaten
3 cups cake flour
1/2 t. baking soda
1 cup buttermilk
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
3 T. cocoa dissolved in 1/2 cup boiling water
1 apple peeled and diced

Filling

3 cups sugar
2 cups milk
1/2 lb. butter
Pinch of soda
2 teaspoons vanilla
1 small bottle cherries
1 can crushed pineapple
1 cup raisins
1 coconut, grated
1 cup pecans

Directions:
Directions:
Cake: Cream butter and sugar; add beaten eggs, soda, buttermilk, cocoa, flour and spices. Beat well. Fold in apple. Bake in 3 layers at 350° for 30-40 minutes. Cool completely before adding filling.

Filling: mix sugar, milk, butter, and soda. Boil until it spins a thread and makes a soft ball when dropped into cold water. Add vanilla, cherries, pineapple, raisins, coconut, and pecans. Spread between layers and on top of cake.

Note: Ma Bert always left out the cherries, because we liked it better that way. Especially good at Christmas!
