12 large potatoes, baked and removed from skin, cut in bite-sized pieces
1 lb. bacon, cut into half-inch pieces, fried until crispy
6 green onions, sliced
1 lb. shredded cheddar cheese
1 large tub (24 oz.) sour cream
4 qt. half and half
1/2 lb. butter
1 1/2 c. flour
5 tbsp. chicken bouillon granules
Salt and fresh pepper to taste
Fresh chives (for garnish)

Directions:
1) In large soup pot, heat butter to bubbling, add flour and bouillon to make roux. Stir until smooth. Decrease heat to medium.
2) Slowly add half and half, stirring to keep from clumping. Soup will eventually thicken.
3) Add shredded cheese (stirring while adding to keep from sticking together) and sour cream. Stir until smooth. Add most of the bacon (reserving some for garnish). Add potatoes and onions. Stir.
4) Using a potato masher, mash quite a bit of the potatoes to incorporate into the soup. Serve garnished with fresh chives and crumbled bacon.
