10 c. day old rice, reheated in your largest mixing bowl
2 cans SPAM, diced into 1/2 inch cubes
1 bunch green onions, sliced
10 eggs, scrambled in bowl
1 c. oil, divided
1 (14.5-oz.) can carrots, chopped up
2 handfuls bean sprouts (or 2, 14-oz. cans bean sprouts)
Soy sauce
Wasabi (my personal favorite)

Directions:
Directions:
1) Heat half of the oil in large pan on medium heat. Add SPAM and fry till slightly crispy. Remove from pan.
2) Heat other half oil in same pan and cook eggs. Just before completely done, add the SPAM back into pan and mix with eggs. Add to rice.
3) Add bean sprouts and carrots to pan and heat through. Add to rice and mix all together.
4) If you have the time, return the rice mixture back into the pan in batches and “fry” the rice for color.
Serve with soy sauce, sweet and sour sauce, and wasabi options.

A favorite from Guam! Do not fear the SPAM, it really does make the best kind of fried rice. If you want to play with fire, go for the “hot and spicy SPAM. That will “notch” things up a bit.
