1 pkg. Frozen Spinach (10oz.)
2 tbsp. Butter
1 Small Onion
3 Eggs
1/4 c. + tbsp. Half and Half
1/4 c. Swiss Cheese or Cheddar
1/4 tsp. Pepper
1 Pre-Baked Pie Shell (9in.)
1/4 c. Parmesan Cheese
Cook Spinach and drained with towel

Directions:
Directions:
Heat butter in skillet and saute onions until transparent. Add spinach and cook for 3 minutes. Beat eggs slightly, mix h & h and cheeses. Add salt and pepper. Pour spinach mixture into pre-baked pie shell and sprinkle with more parmesan.

Bake at 375º for 30 minutes or until puffed and golden brown.

Serve hot or cold.
