Ingredients: BASIC MEATLOAF: great for meat loaf sandwiches as this is firmer.
1 - 1/2 lbs Fresh Ground Beef or Ground Round from a butcher 1/2 lb Fresh lean Ground Pork ( option ) 1/2 cup dried Bread Crumbs, Soda Crackers or Rolled Oats 2 beaten Eggs 1/2 cup Milk or Water 1 Tbsp Worcestershire Sauce 1/2 tsp Garlic seasoning 3/4 tsp Montreal Steak Spice
Crater Gravy: make a crater in the mountain of mashed potatoes and fill with this easy gravy. 3 Tbsp Butter 3 Tbsp Flour 1 can Beef Broth (or 1 cup water with 1 tsp Beef Bouillon) 3/4 cup Water 1 can Cream of Mushroom Soup
Melt butter in a small pot and blend in flour. Add Broth and Water, cook on medium heat,stirring continuously with a whisk, till thickened. Add Cream of Mushroom soup and simmer on low for 10 - 15 minutes.
VARIATIONS:
Barbecue- omit milk or water, and add 1/2 cup of your favourite BBQ sauce in the meat loaf and brush some on the top;
Mushroom Stuffed Meat loaf: Saute 2 cups of sliced Fresh Mushrooms with 1/2 cup chopped onion. Add 1/2 cup bread crumbs to mixture. Pat out 1/2 Meatloaf mixture in Loaf pan, then place Mushroom mixture on, and top with remaining half Meatloaf mixture. Bake 375 for 1 1/4 hour. This meat loaf is not as suited for sandwiches after as it tends to fall apart.
Tomato or Mushroom Soup: Add 1/2 tin of soup to the meat loaf and the remaining 1/2 on top. Bake as usual.

Directions:In large bowl, Mix together Ground Beef and Pork. Add beaten eggs, and rest of ingredients mixing gently. Never over work Ground Meats as they become tougher. Gently pat into 9"x5" loaf pan. Bake at 350 degrees for 1 hour. Let sit for 10 minutes before cutting. Drain off excess fat. |
