Ingredients: Picking Salt Egg Pickling Cucumbers Alum Vinegar Sugar Stick Cinnamon Whole Cloves cheese cloth (to wrap cinnamon and cloves)

Directions:Make a brine of pickling salt and cold water strong enough to bounce a RAW egg. Place cucumbers in a jar or crock. Cover completely with the brine. Place a dinner plate on top weighted down with a jar of water to keep cucumbers under the brine. Let cucumbers set in this salt brine for 2 weeks.
After 2 weeks remove any mold from top. Pour off brine and wash cucumbers in cold water. Slice and cover with cold water and let stand for 3 days.
Pour off water. Mix 2 Tablespoons alum to 1 gallon boiling water. Cover the cucumbers and let stand 24 hours. Depending on amount of cucumbers you may need to adjust recipe. Need enough to cover cucumbers.
Pour off and place cucumbers on a towel for 1 hour to dry.
While cucumbers are air drying, make a syrup of 1 quart vinegar, 2 quarts sugar, 2 sticks cinnamon and 2 tablespoons of whole cloves (wrapped in cheesecloth). You may need to Increase these amounts according to amount of cucumbers. Bring this to a boil and pour over cucumbers. Drain off each day for the next 3 days. Each time add 1/2 cup of sugar and boil pouring back over the cucumbers. On the 5th day drain off syrup and boil. Pack cucumbers into canning jars and cover with boiling syrup. (Do not add sugar on the 5th day.) Process pints 15 minutes in hot water bath. |

Notes: These cucumbers take a long time to prepare, but they are so sweet and tangy. We like to eat with pinto beans and cornbread or with hamburgers.
