3 egg whites
1 cup powdered sugar (icing sugar)
1 teaspoon vanilla
8 ounces (3 generous cups) sweetened shredded coconut
maraschino or candied cherries for decoration

Directions:
Directions:
Beat egg whites until stiff.
Gently fold icing sugar into the egg whites.
Add vanilla and fold in the coconut.
Drop onto an ungreased cookie sheet (can use parchment paper).
Decorate with as small piece of cherry in the middle.
Bake at 250 º F for 20 to 30 minutes.
Bake slightly longer if you like your macaroons crisp.

Gluten free if the coconut and icing sugar are. Coconut is naturally gluten free but sometimes flours with gluten are added. Check the label to be sure. Most icing sugars contain some cornstarch and so are gluten free. Again take time to check the label as some have wheat starch. 1 cup of shredded coconut equals 2.5 ounces.
