1 c uncooked long grain rice
14 oz Chicken broth
1 c sour cream (reduced fat is fine)
4 oz diced green chilis
1 c shredded Monterey Jack Cheese - divided
1 can whole kernel corn drained
1/4 c finely chopped cilantro
salt and pepper to taste

In a large pot bring rice and broth to boil. Reduce heat to low, cover, and simmer 20 min. Preheat oven to 375º. lightly grease 1.5 qt casserole dish. In pot with cooked rice, mix sour cream, green chilis, 1/2 c Monterey Jack, corn, and cilantro. Season with salt and pepper. pour into baking dish. Top with remaining cheese. Bake uncovered 30 min until cheese is bubbly and lightly browned.
