Ingredients: MIracle Whip is great for salads, sandwiches, and especially for Egg, Tuna, Salmon, Chicken Salads. However if you read the ingredient list, it is not so appealing. Make your own! This Modern Dairies Recipe was around before you could buy Salad Dressings at the store. Baba used it exclusively in her Potato Salads. It certainly can be used as Mayonnaise but has more of a Miracle Whip tanginess that I prefer.
4 Eggs 1 cup White Sugar 1 tsp Salt 2 tsp pure Mustard 2 Tbsp Flour few grains Cayenne Pepper 1/4 cup Water 3/4 cup Vinegar Butter the size of a walnut 1 cup Sour Cream

Directions:Beat Eggs thoroughly ( important as you are actually cooking your dressing )
IN the top of a double boiler pot or pot with a heavy bottom:
Mix together: Sugar, Salt, Mustard, Flour and Cayenne Pepper. Add Water and Vinegar to dry ingredients, mixing well till smooth. Add beaten Eggs
Cook in top of double boiler or heavy pot over Medium heat, STIRRING constantly, until mixture has thickened.
Add Butter. Allow to cool before adding Sour Cream.
Place in 1 Quart Sealer with tight lid and can refrigerate up to 2 weeks. |
