Ingredients: 2 cups Flour 2 tsp Baking Powder 1/4 tsp Baking Soda 1/2 tsp Salt 1/4 cup Shortening ( this is a very old recipe when Butter was expensive ) 3/4 - 1 cup Buttermilk
I use Butter or half butter half Shortening for a crispy outside and soft inside. For best results, it should be chilled.
Preheat oven to 450 degrees.

Directions:Sift together dry ingredients. Cut in Chilled Butter and/or Shortening using a Pastry Blender or 2 Knives, until the Butter is Pea size. Add Buttermilk and stir till well blended. It will be very sticky.
Place on Floured surface and with floured hands, Knead 10-15 times. Roll or pat out to 1/2 " thickness. Use a cookie cutter or small drinking glass, dipped in flour, to cut out biscuits, Gently form remaining dough into a ball, pat or roll out again to 1/2 " thickness and cut for baking.
Place on Ungreased baking sheet and bake at 450 degrees for 10-12 minutes. |

Notes: This is a very basic, but delicious hot biscuit that can be quickly whipped up for breakfast, to serve with soup, stew or salad.
Options: add some grated Cheddar or Swiss Cheese and diced green onion. Sprinkle Sugar on top before baking. Finely dice some hot peppers, olives, chives, pepperoni… Garlic seasoning or oven roasted garlic and Parmesan Cheese. Split and put jam in middle. You can get pretty inventive!
