1 lb ground beef
1-2 T. cooking oil
1 c. chopped onion
4 c. hot water
1 c. each carrots, celery, potatoes
2 tsp. salt
1/2 tsp. pepper
1 tsp. beef extract (or a bouillon cube, or beef stock, or the like)
1 bay leaf
pinch basil
6 whole fresh tomatoes, small stems removed, chopped or pureed

Brown beef in hot oil in heavy pot. Add onions. Cook 5 minutes more. Add water, carrots, celery, potatoes and seasonings. Add tomatoes. Mix thoroughly. Bring to a boil, cover, and simmer for at least 10 minutes longer.

The Gardner family says that Andy always fixed this soup once the summer was over and the autumn months had begun. Feel free to add other vegetables as well...garlic, corn, green beans, peas, kale, spinach, lima beans, cannellini beans...whatever veggies you like in your soup. Also, a small can of V-8 juice really pumps up the tomato flavor.
