1 c flour
1 T sugar
1 t baking powder
1/2 t baking soda
1/4 t salt
1 c buttermilk
2 T + 2 t milk
1 egg
1 T + 2 1/4 t melted butter
1 T vanilla (not Mexican)
Chocolate chips, berries, nuts (optional)

Directions:

Mix dry ingredients together. Mix wet ingredients in a separate bowl. Right before cooking, mix dry and wet ingredients being careful not to overmix (there should still be small lumps. Add nuts/chips/berries at this point if desired. Cook on a 350º griddle.

Note: for a healthier version, replace half the flour with whole wheat.
