1 small onion, chopped finely
1 T. butter
4 eggs, beaten
Salt and pepper to taste

Saute butter and onions in fry pan over medium heat. Add eggs, gently stirring with a fork, until eggs are set but still soft. Season to taste. Serve with Heinz Ketchup!

Dad loved his eggs for breakfast and this recipe was his favorite way to fix eggs for us on Sunday mornings....Dad would go to 8 AM Mass and then come home and fix breakfast and we would go to 10:30 AM Mass with Mama. This gave Mama time to get all of us ready!
