When you don't have time to make Perogies, this truly is a good substitute!

6 cooked Lasagna Noodles ( whole wheat just don't work as well )
2 Cups Mashed Potatoes.
1 Onion, chopped.
1 Tbsp Oil
1 Egg, lightly beaten
1 Cup 1% Cottage Cheese or Ricotta Cheese.
1 Cup grated Cheddar Cheese
Salt and Pepper to taste
Garnish with diced Green Onion, Fried Onions and Sour Cream

Preheat oven to 350 degrees.

Boil Lasagna Noodles in salted water as per package directions.

Saute Onion in Oil over medium Heat till done.

In a large bowl, combine Mashed Potatoes with cooked Onions, Egg, Cottage or Ricotta Cheese, half the Cheddar, Salt and Pepper.

Prepare a 9"x13" baking pan with Parchment Paper or grease with oil.
Place 3 cooked Lasagna Noodles on bottom of pan.
Spread with Potato mixture.
Top with remaining 3 Lasagna Noodles and sprinkle with remaining Cheddar.

Bake uncovered, for 30 minutes. Then place under broiler for about 3-4 minutes to melt and brown the chisel.

Garnish with Sour Cream, fried Onions and/or Green Onions.

Parchment Paper is my best friend in the kitchen. I use it to line all baking pans or dishes for minimal clean up after. If you use it to cover a dish in the oven, you can lightly dampen it so it doesn't burn. It doesn't catch fire unless your oven temp is over 500 degrees.

When making casseroles like this, you can easily alter ingredient amounts and still create a wonderful meal.
