2 pkgs of yeast
1/4 c. warm water
1/3 c. sugar
1/4 c. butter
1/8 tsp. salt
1 c. hot milk (cooled)
1 egg (lightly beaten)
3 c. all-purpose flour

Directions:
Directions:
1. sprinkle yeast over warm water in large bowl, stir in until yeast has dissolved, let stand for 10 min. will foam.
2. add sugar, butter, and salt to hot milk, stir in sugar until dissolved and butter is melted let cool.
3.add milk mixture to yeast and stir in beaten egg, mix in flour one cup at a time. from a soft ball.
4. kneel for 5 or 6 min.
5. place dough in a warm well greased bowl, cover to let rise for about 1 1/2 to 2 hours.
6 punch down, and pinch into small balls, grease muffin pan, let rise again for 45 to 1 hour.
7. preheat oven 375 º, bake for 18 to 20 min.

I use less flour, and kneeled the dough a min or two more, they should not come out heavy.
