2 c. uncooked long-grain white rice (or 1 3/4 c. brown rice)
1 1/2 cans (14.5-oz.) vegetable broth
1 half onion, chopped or sliced thin
1 small can tomato sauce
1 stick butter
1/2 c. green onions, chopped
1/2 c. green bell pepper, diced
1/2 lb. smoked link sausage, cut into bite-size pieces
1 bay leaf
1 heaping tbsp. chopped garlic
2 or 3 heaping tbsp. creole seasoning* (Zatarain's is the best)
1 1/2 lbs. shrimp, peeled, de-veined
Garlic bread for serving

Directions:
Directions:
1) Preheat oven to 350º F (180º C).
2) In a large dutch oven, combine all ingredients except shrimp. Bake covered for 40 minutes.
3) Carefully add the shrimp, cover and bake for 20 more minutes.
4) Remove from oven, remove bay leaf, stir well.
Serve immediately with warm garlic bread.

For some cultures, this dish will be very spicy. For an easy pork-free option, omit the sausage and use 2 lb. shrimp.
