3 cups of water
1 1/2 cups of quinoa
1 large cucumber
1 large tomato
1 bunch of fresh parsley
1 bunch of scallions
1/3 cup of olive oil
1/2 cup of lemon juice (fresh or squeezed)
1 1/2 - 2 tsp of salt

Directions:
Directions:
1. Boil the quinoa until completely cooked (water completely gone and the white rings appear on the grains)
2. Allow the quinoa to cool in the fridge
3. Chop the tomato, cucumber, scallions and parsley and add it to the cooled quinoa
4. Mix the olive oil, lemon juice, and salt together, then mix it with the quinoa, tomato, cucumber, parsley, and scallion mix
