4 tbsp butter
1 small onion chopped
4 tbsp flour
3 cups milk heated
1/2 cup of Gruyere cheese
Pinch of cayenne pepper
Salt and white pepper

Directions:
Directions:
* heat butter in heavy sauce pan over medium heat add onions and cook 2 minutes.

* add flour and mix well. Cook another 2 minutes on low heat.

* pour in half the milk and mix well. Add remaining milk and add remaining seasoning. Cook sauce for about 12 minutes over low heat and whisk occasionally. Mixture should be thick by now.

* mix in cheese and cook for another 3 minutes.
