3 oz butter
2 cloves of garlic, chopped fine
1/2 med. onion, chopped fine
3 celery stalks, chopped fine
6 - 9 Tbs. flour

3 cans minced clams
1 qt. half & half
1/4 tsp. white pepper
1 tsp. salt
1/2 tsp. ground thyme, I use a little less

Directions:
Directions:
In one saucepan, melt butter and add garlic, onion and celery
Braise over medium heat until vegetables are tender but not brown.

Add: 6-9 Tbs. flour, mix to make a roux, set aside

In another pot, combine the juice from the clams, with the half & half. Add pepper, thyme, and salt.

Heat until just below boiling point, add roux and combine, may have to use a mixer or whisk to remove all lumps and allow sauce to thicken.
Add clam meats
