1 C soy sauce
1/3 C packed brown sugar
1/2 C water
1/2 C sugar
1/4 C mirin (found in Asian section of food stores, a heavily sweetened rice wine)
1 Tbs minced garlic
1 Tbs minced fresh ginger (I use 1 tsp of ground ginger)

Directions:

Combine ingredients in a saucepan and heat until the sugars dissolve. Cool marinade before using. This recipe makes enough to marinate 3 - 4 pounds of meat, ribs or chicken.
