1 cup Bisquick/baking mix
3/4 cup milk
2 eggs

Blend all ingredients thoroughly in a blender or with mixer (I use a Magic Bullet and let it mix for about 30 seconds). Heat non-stick griddle over medium heat. When griddle is hot, rub a little butter on the surface and pour 1/3 cup batter on griddle, immediately tilting the griddle to spread the batter out into a 9" circle. Let cook until edges are dry and starting to curl, turn over and cook other side 20 seconds. Remove from griddle, and spread filling on 1/2 of crepe. Fold over onto filling, then fold again to make a quarter-circle. Dust with powdered sugar, top with fruit of choice.
Filling suggestions: Nutella, peanut butter, softened cream cheese, drained sweetened yogurt - just one of them, though
Top with: sliced strawberries, banana, berries, apple pie filling, pancake syrup, caramel syrup, chocolate syrup, whipped cream - again, moderation is the key.
This makes about 6 standard crepes, serves about 3. If you make them smaller and stack them, you might get 4 servings.
